Sugar in Alcohol: Beer, Wine, Cocktails, and How Fermentation Removes Sugar
How much sugar is in alcoholic beverages, how fermentation converts sugar to alcohol, which drinks are highest and lowest in sugar, and how alcohol and sugar interact metabolically.

Alcohol production is, at its core, the conversion of sugar to ethanol by yeast. What sugar remains after fermentation depends on the type of beverage, the fermentation completeness, and what manufacturers add afterward. The range, from 0g in a dry spirit to 40g in a sweet cocktail, is wide enough that knowing specific numbers matters.
How Fermentation Removes Sugar
Yeast ferments simple sugars (glucose, fructose) under anaerobic conditions: C₆H₁₂O₆ → 2 C₂H₅OH + 2 CO₂
One glucose molecule yields two ethanol molecules and two carbon dioxide molecules. When fermentation is allowed to run to completion, essentially all fermentable sugars are consumed.
“Residual sugar” (RS) is what remains after fermentation:
- Unfermentable polysaccharides from grain or grape
- Deliberate stopping of fermentation before completion (in sweet wines)
- Sugar added after fermentation (dosage in Champagne, backsweetening in some wines and ciders)
Distilled spirits (vodka, gin, whiskey, rum) distill the alcohol from a fermented base. The distillation process separates ethanol from most residual sugar, leaving dry spirits with near-zero sugar content.

Beer sugar comes primarily from unfermentable dextrins (complex carbohydrates from malted grain). These aren’t counted as “sugars” in the same sense as sucrose, they’re slowly fermented and don’t spike blood glucose as sharply.

Confusingly, “Extra Dry” Champagne is sweeter than “Brut”. The terminology reflects historical usage, not relative dryness in the modern sense.
Spirits (unflavored): Vodka, gin, whiskey, rum, tequila, and brandy contain essentially no sugar — less than 0.5g per 1.5 oz serving. Flavored spirits (whipped cream vodka, coconut rum, honey whiskey) add sugar: 5-10g per serving.

Cocktail sugar comes from mixers (juice, simple syrup, liqueurs), not from the base spirit.
The Metabolic Interaction Between Alcohol and Sugar
When both ethanol and glucose are present, the liver prioritizes ethanol metabolism. Alcohol dehydrogenase processes ethanol first; glucose metabolism is backgrounded. The sugar from a cocktail therefore gets processed later than it would without the alcohol present.
Alcohol also inhibits gluconeogenesis. The liver’s ability to make new glucose. In people with diabetes or low glycogen stores, this can cause hypoglycemia hours after drinking. This is why drinking on an empty stomach combined with medication that lowers blood sugar is particularly dangerous.
Chronic alcohol consumption raises triglycerides (through enhanced hepatic VLDL synthesis) and promotes the same de novo lipogenesis pathway as excess fructose, compounding the lipid effects when alcohol and sugar are combined.
Alcohol Labeling and Sugar Disclosure
Unlike food, alcoholic beverages sold in the U.S. are not required to display Nutrition Facts labels. The TTB (Alcohol and Tobacco Tax and Trade Bureau), not the FDA, regulates alcohol labeling. Beer, wine, and spirits makers may voluntarily display nutritional information, but most do not. Craft beers and hard ciders increasingly publish sugar and calorie data voluntarily, but it’s not required.
