The average American eats about 77 grams of added sugar per day. The American Heart Association recommends 25 grams for women, 36 for men. Nearly double the limit, every day, across 330 million people. A paper on this topic doesn’t need to establish that a problem exists. It needs to pick something specific to argue about it.


The Sugar and Health Research Paper Thesis Problem

The weakest thesis you can write is “Sugar is bad for your health.” It’s true. It’s also not arguable. A paper needs a claim that someone could push back on.

Better options:

The lobbying angle: The sugar industry’s decades of research manipulation directly delayed public health policy, costing an estimated 35 years of dietary guideline reform.

This works because it has a specific, documented story behind it (the Sugar Research Foundation payments to Harvard scientists in the 1960s), it explains why the problem persisted rather than just asserting that a problem exists, and it implicates institutions your reader trusts.

The fructose angle: Added fructose, not total caloric intake, is the primary driver of metabolic syndrome in American adults.

Robert Lustig at UCSF has been making this case for years. Actual scientists have been arguing with him using actual data. A real scientific controversy with credentialed people on both sides gives you something to engage with rather than just summarize.

The policy angle: Current FDA labeling requirements are insufficient to allow consumers to make informed decisions about added sugar consumption.

Practical, arguable, grounded in real regulatory history. The 2016 Nutrition Facts panel update added an “Added Sugars” line, you can argue it didn’t go far enough, or that the FDA’s 50g daily reference value is too permissive compared to AHA guidelines.

The contrarian angle: The neurological evidence for sugar addiction in humans remains insufficient to support public health messaging that treats sugar as a controlled substance.

Sugar addiction language is everywhere in popular media. Pushing back with the actual neuroscience is harder to write and more impressive to read.

The contrarian angle is the hardest to write and tends to produce the most interesting papers, because it requires engaging seriously with the evidence rather than summarizing a consensus.


Three Sugar and Health Studies That Hold Up

Not all sugar research is equal. Some of it is funded by Coca-Cola. These three studies are the ones that hold up:

On sugar and heart disease: Yang Q, et al. (2014). “Added Sugar Intake and Cardiovascular Diseases Mortality Among US Adults.” JAMA Internal Medicine. This study followed 31,000 adults for 15 years. People who got 17-21% of calories from added sugar had a 38% higher risk of dying from cardiovascular disease compared to those at 8%. It’s large, long-term, and hard to dismiss.

On fructose and the liver: Lustig RH, et al. (2012). “Public Health: The toxic truth about sugar.” Nature. The most-cited paper in this debate. Lustig argues sugar should be regulated like alcohol. Cite the biochemistry section regardless of whether you agree with the policy conclusion.

On the industry cover-up: Kearns CE, Schmidt LA, Glantz SA. (2016). “Sugar Industry and Coronary Heart Disease Research.” JAMA Internal Medicine. Researchers at UCSF dug up internal Sugar Research Foundation documents from the 1960s showing that the industry paid Harvard scientists to publish work blaming fat rather than sugar for heart disease. It’s one of the most documented examples of research manipulation in modern nutrition science.

Stick to PubMed, Google Scholar, or your school library database. “Studies show” without naming the study is the thing that separates a C paper from a B.


The Arguments That Usually Get Skipped

The fat-free food problem. In the 1980s and 90s, “fat-free” became the health standard. Food companies removed fat and replaced it with sugar, because fat-free food tastes like cardboard without something to compensate. Fat-free Snackwells cookies had more sugar than the originals. The push to eat less fat may have made the sugar problem worse, not better.

Sugar isn’t the same as carbs. Papers that conflate them are easier to criticize. Whole oats are carbohydrates. White rice is carbohydrates. The metabolic effects of complex carbohydrates with fiber are substantially different from fructose and glucose in a can of Sprite — slow digestion versus a liquid spike with no fiber to buffer it.

Liquid calories don’t register as food. Solid food triggers satiety through stretch receptors in the stomach, slower gastric emptying, and hormonal signals including GLP-1 and PYY. Liquids bypass most of this. You can drink 600 calories of juice and feel as hungry an hour later as if you’d had water. This is why sweetened beverages show up as a specific risk factor in study after study, separate from sugar consumption overall.

The dose question. A single cookie doesn’t cause diabetes. Papers that treat any sugar as categorically toxic are easier to argue against than ones that engage seriously with dose-response relationships. If you’re writing the contrarian thesis, this is where you start.


On Conclusions

A conclusion restates what the evidence proved. It’s not a summary of what came before, and it’s not the place to introduce policy implications that didn’t appear in the paper. One paragraph restating the thesis in light of the evidence presented. Then stop.


Four Common Weaknesses

The weakest papers spend two pages establishing that soda has sugar in it, the premise, not the argument. They cite .com sources instead of peer-reviewed studies. They write “studies show” without naming a study. And they use the word “nowadays.”
