Raw Sugar vs. Refined Sugar: What's Actually Different
The real differences between raw, turbinado, demerara, muscovado, and refined white sugar — in chemistry, mineral content, culinary behavior, and whether 'raw' is meaningfully better for you.

The premium on “raw” sugar, turbinado, demerara, muscovado, coconut sugar, raw cane sugar, reflects a widespread belief that less processing means more nutritional value. The chemistry is more nuanced. Understanding what’s actually in each product separates marketing from substance.
What “Raw Sugar” Means (and Doesn’t)
“Raw sugar” on a package doesn’t mean unprocessed. In the U.S., the FDA prohibits selling genuinely raw sugar as a food ingredient because field-extracted cane juice contains soil, bacteria, mold, and agricultural residues. Retail “raw” sugars have been processed, typically through one centrifuge cycle, but not fully refined.
The spectrum from raw to refined:
Blackstrap molasses: Not crystallized sugar; the liquid residue from the third centrifuge pass. Highest mineral content, least sucrose (~45-55%).
Muscovado (raw cane sugar): The darkest crystallized form, dried cane juice with minimal processing. Soft, sticky texture. High molasses content. About 88-90% sucrose, 10-12% non-sucrose (molasses, water).
Turbinado: Centrifuged once, with most molasses removed. Light golden, coarse crystals. About 96% sucrose. This is what you find at coffee shop sugar stations as “Sugar in the Raw.”
Demerara: Similar to turbinado; harder crystals, slightly different flavor profile. About 97% sucrose.
Light and dark brown sugar: White sugar with molasses added back in controlled amounts, 3.5% for light, 6.5% for dark. Standardized flavor; consistent between brands.
White sugar: 99.9%+ sucrose. All molasses removed.
Powdered/confectioner’s sugar: Ground white sugar with 3% cornstarch to prevent clumping.
What Molasses Contains
The nutritional distinction between raw and refined sugar comes entirely from molasses content. One tablespoon of blackstrap molasses (21g) contains:
- Iron: 3.5mg (19% DV)
- Calcium: 200mg (15% DV)
- Potassium: 293mg (6% DV)
- Magnesium: 48mg (12% DV)
- Manganese: 0.49mg (21% DV)
Turbinado has only a thin coating of molasses. One tablespoon of turbinado: roughly 0.1-0.2mg iron, 5mg calcium — trace amounts that make no meaningful nutritional contribution at typical serving sizes.
The key calculation: To get the iron in one tablespoon of blackstrap molasses from turbinado, you’d need to consume approximately 35 tablespoons of turbinado, 525 calories of sugar. The nutritional argument for turbinado over white sugar doesn’t hold up quantitatively.
Glycemic Index
White sugar (sucrose): GI ≈ 65 Turbinado: GI ≈ 65 (essentially identical; same sucrose content) Coconut sugar: GI ≈ 54 (claimed; studies show wide variability 35-78) Honey: GI ≈ 58 Agave nectar: GI ≈ 15 (low GI because 80-90% fructose, which doesn’t raise blood glucose acutely. But presents the liver with the same fructose burden as other high-fructose products)
The GI differences between sugar types are modest and inconsistent across individuals. None are “low GI” enough to make clinically meaningful differences in blood glucose response at typical cooking amounts.
Culinary Differences
Turbinado and demerara: Larger crystals; don’t dissolve easily in cold applications. Good for topping coffee, finishing baked goods (crunch texture). Less suitable for recipes requiring complete dissolving.
Muscovado: Adds deep molasses flavor; can overpower delicate applications. Works well in dark cakes, marinades, and some chocolates.
Brown sugar: Most consistent across brands; good for baking where molasses flavor is desired at a controlled level. Unlike muscovado, it’s shelf-stable and doesn’t clump as severely.
Coconut sugar: Burns at slightly lower temperature than white sugar; caramelizes differently. Can’t be used as a 1:1 substitute in all applications.
Bottom Line: What to Tell Your Teacher
White sugar and turbinado are both sucrose. The 4% molasses in turbinado contains trace minerals at amounts too small to be nutritionally significant at cooking quantities.
If you’re consuming large amounts of sugar and want minimal processing, muscovado provides measurable mineral content compared to white sugar — but the amounts are still modest compared to getting those minerals from vegetables or dairy.
Blackstrap molasses is genuinely nutrient-dense and is the only sugar-adjacent product with meaningful mineral content at typical serving sizes.
